Salsa:
2-3 medium sized ripe, but firm tomatoes, diced (I do not seed them but feel free to do so)
1 green onion, chopped
1/2 c chopped, fresh cilantro
1-2 sliced of pickled jalenapnoes
1 small lime, juiced
salt
- Place chopped tomatoes in a bowl and sprinkle with salt then let sit while you prepare the rest of the ingredients;
- Drain off most of the liquid from the tomatoes, add remaining ingredients (including lime zest but be careful not to add too much because it will make it bitter).
